Peasant potato breakfast

The Chef whipped up a fantastic breakfast this morning!  He chopped and sauteed Russett potatoes in canola oil, seasoned with salt and pepper.  He then fried a couple of eggs, topped with freshly sliced tomato, basil, and mozarella cheese.  Yum!

  2. Peasant. The type of potatoes that are cooked this way with eggs and tomatoes on top are peasant potatoes. But they are pleasant 🙂
