What could be better than roasted red peppers, goat cheese, and mushrooms in a sandwich? Not much.
The Chef sauteed up some button mushrooms (you could use whatever kind you have on hand) in some olive oil with salt and pepper. We had purchased a can of roasted red peppers and he sliced them length wise. He then topped them with slices of goat cheese and placed on tandoori bread. Sprinkled oregano on top and toasted in the oven on 350 degrees for 10 minutes.
